Wheatabix recipes: Wheatabix muffins

Weetabix muffins

Using a breakfast favourite to create a simple and tasty alternative. From raisins to chocolate there are many exciting alternatives to suit all tastes.
Servings 8 muffins

Ingredients
  

  • 2 small bananas
  • 2 wheat biscuits
  • 90 ml whole milk
  • 1 egg
  • 40 g butter, softened
  • 112 g self-raising flour
  • 1 tsp cinnamon
  • 2 tbsp chopped raisins

Instructions
 

  • Preheat the oven to 180 deg.
  • Mash the banana in a bowl until there are no lumps.
  • Crush the wheat biscuits into the banana mix.
  • Add the milk and let sit for 10 minutes.
  • Add the egg and mix.
  • In a separate bowl cream the butter and then add the flour and cinnamon.
  • Add the banana mixture and fold in the raisins.
  • Put in the oven for approximately 25 minutes. To check if cooked, insert a knife/ skewer into the centre and see if it comes out clean.

Notes

Other options – for a treat, I have added chocolate chips instead of raisins!
